Egg Bites

Muffin-pan egg cups with ham and cheese — easy meal-prep breakfast.

Ingredients

  • 8–10eggs, whisked
  • 1ham steak, diced
  • 100 ghalf & half
  • chopped chives or spinach
  • 100 gshredded cheese
  • 1–2 tspsalt
  • 1–2 tsppepper

Instructions

  1. Mix it all together in a bowl.
  2. Fill muffin pan ¾ full with the mixture.
  3. Bake at 375°F for 15–17 min until set.

Notes

Grease the pan with oil or butter — eggs will weld themselves to a bare muffin tin.
