Instant Pot Creamy Chicken & Rice
One-pot weeknight meal — chicken, rice, peas, and parmesan cream sauce.
Ingredients
- 1 lbchicken, cut into bite-sized pieces
- 1 tbspbutter or oil
- 1small onion, diced
- 2 clovesgarlic, minced
- 1 cuplong grain rice
- 1.5 cupchicken broth
- 1 tspsalt
- ½ tsppepper
- ½ tsppaprika
- ½ cupgrated parmesan
- 1 cupfrozen peas (or mixed veggies)
- 1 cupcream (heavy or half & half)
Instructions
- Sauté chicken in the Instant Pot with butter for a couple minutes per side. Set aside.
- Sauté onion for a couple of minutes.
- Add garlic and sauté for 30 sec to 1 min.
- Add rinsed rice and a splash of oil, mix for a minute or two.
- Add the liquids and seasonings, then return the chicken to the pot.
- Pressure cook on High for 8 minutes.
- Natural release for 10 minutes, then vent the remainder.
- Stir in cheese and veggies; let warm through.
