Instant Pot Creamy Chicken & Rice

One-pot weeknight meal — chicken, rice, peas, and parmesan cream sauce.

Ingredients

  • 1 lbchicken, cut into bite-sized pieces
  • 1 tbspbutter or oil
  • 1small onion, diced
  • 2 clovesgarlic, minced
  • 1 cuplong grain rice
  • 1.5 cupchicken broth
  • 1 tspsalt
  • ½ tsppepper
  • ½ tsppaprika
  • ½ cupgrated parmesan
  • 1 cupfrozen peas (or mixed veggies)
  • 1 cupcream (heavy or half & half)

Instructions

  1. Sauté chicken in the Instant Pot with butter for a couple minutes per side. Set aside.
  2. Sauté onion for a couple of minutes.
  3. Add garlic and sauté for 30 sec to 1 min.
  4. Add rinsed rice and a splash of oil, mix for a minute or two.
  5. Add the liquids and seasonings, then return the chicken to the pot.
  6. Pressure cook on High for 8 minutes.
  7. Natural release for 10 minutes, then vent the remainder.
  8. Stir in cheese and veggies; let warm through.
